Sorry I haven't posted much. I just haven't had much to say. Anyway, I want to have a racially diverse cast of characters (the two main characters are now both minority races), but I want to do so respectfully. Any advice?

Just write people. Everyone has hopes, dreams, fears, likes, dislikes. Think of those things when thinking about your characters and how you want to fit it into your story. Sometimes your character will even "speak" to you and the story will flow out of it or you can have the story and you'll find traits in that character to go along with the story. There's no one path to creating and character building.

You want to make sure that you develop a detail cultural and family history behind the characters. Characters can be of the same race, but because of culture and family dynamics can have totally different personalities. A character raised in an urban setting, in a broken home will have different personality than one raised in an upper class, stable family setting, though both characters can be of the same race.

It's good to do a little research on the culture and even ask real people who are of that culture too :-)

Make sure you don't tie them down to stereotypes. I recommend using a platform of infamous minorities and build certain aspects off of them.
